Planting tip: Peas are cool-weather lovers, so plant them early in the spring once the soil is workable, or go for a late-summer planting for a fall harvest. Cowpeas thrive in the hot sultry heat. Sow your seeds about 1-2 inches deep, spaced 1-2 inches apart in rows that are about 18 inches apart. They’ll thrive in well-drained, fertile soil that’s enriched with compost or organic matter.

Pro tip: Peas are climbers, so give them some support! Use a trellis or fence for those edible pod peas and snap peas to help them grow tall and strong.
